Grandad’s Cornflake Cakes

Last Monday I found out that my Grandad Dave passed away. Until this point I’ve not really faced it but I’ve been looking back on some memories, one of which being his love for Cornflake Cakes, especially if I made them.

The time we spent together was full of laughter, love and storytelling. Along with my Dad, he taught me about good music, history, adventure and gave me my sassy sarcastic sense of humour I have today. I remember stories of Grandad’s time working a Heathrow and his antics at school with Eric Clapton. He was cheeky like that. He would have been the boy your Mum told you stay away from because he would have got you in trouble.

This recipe isn’t handed down from my elders, it’s not steeped in history but it does hold very special memories. This is a post dedicated to you Grandad, I hope the Cornflakes Cakes are as good as mine wherever you are!


1 bar Dark Chocolate
1 bar Milk Chocolate
200g Frosted Cornflakes


  1. Melt the chocolate in a bain marie over a low heat
  2. Mix in the cornflakes
  3. Spoon into cupcake cases and allow to cool in the fridge
  4. Resist if you can!
